Grab ‘n’ Go Breakfast Bites

This is the perfect meal that you can prep a lot of and save for a couple days in the fridge. Then, throughout the week, grab a few, pop them in the microwave and get going! These will fill your belly until lunchtime and have better ingredients than grabbing that doughnut on the way to the office.

What makes this recipe even better? These are totally customizable to your taste preferences. Add the veggies or seasonings that make your taste buds sing. Here’s how I make mine, though:

  • 12 eggs scrambled
  • 1/2 onion diced
  • 1 diced green pepper
  • 1 lb sausage cooked and drained 
  • Cheese to sprinkle over top (your choice of cheese type)
  • Salt and pepper to taste
  • Optional* your favorite bbq seasoning to taste

Let’s get baking!

Starting out, preheat your oven to 350°F.

In a large bowl, beat 12 eggs and set aside.

Next, in another large bowl (or use the same bowl and mix in with the eggs, it works either way… just might be easier this way) combine and mix sausage, onion and green pepper along with all seasonings.

Lightly grease or line muffin tins.

After that, fill the muffin tins 1/2 full of sausage mixture and pour over beaten egg until 3/4 filled.

Sprinkle cheese over the tops and bake 15-20 minutes or until eggs are set. 

Let cool 5-10 minutes.

Grab a Ziploc and save for up to 4 days for an easy grab and go or grab a few and use them as an easy breakfast burrito filling. Enjoy!
