Breakfast Casserole

Delicious, crowd pleasing casserole that can also be made into breakfast burritos.

Materials

  • 1 lb cooked and chopped bacon OR 1 lb of cooked chunked up sausage
  • 1 bag frozen potatoes/hash browns
  • 8 oz shredded cheddar cheese
  • 8-12 whole eggs
  • Favorite breakfast seasoning to taste or just salt, pepper and garlic powder

Instructions

  • Start off by lightly greasing a grill safe pan. Spread the whole bag of hash browns on the bottom of the pan evenly.
  • Sprinkle cheese over the hash browns and then add all the bacon or sausage over that, spreading evenly.
  • Next, pour the beaten eggs over everything, making sure to cover the entire pan.
  • Cover and then smoke at 400°F for 45 mins or bake at 400°F for 40 mins or until the eggs are completely set up. I usually just poke the center with a spatula to see if the eggs are cooked.
  • Serve on a plate as a casserole or add it to a shell to make it the ultimate breakfast burrito. It’s delicious!
  • If you don’t like bacon or sausage….use chorizo, ham or even just veggies!
