Author: Justin Holmes

Ingredients

  • 1 Tbsp olive oil
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • Salt and pepper too taste
  • 1 Tbsp garlic powder
  • 1 chopped onion
  • 1 chopped green pepper
  • 1/2 stick of salted butter
  • 2 drained cans of whole kernel corn
  • 1/4-1/2 cup flour
  • 1/2 lb 1lb of bacon cooked and chopped
  • 4 cups chicken stock
  • 2 cups 2% milk or your preference
  • 16 oz Velvetta chopped into cubes helps melt faster
  • Optional* 4 cubed potatoes

Instructions

  • In a large pot, over medium heat, add oil to your pan and let it heat up.
  • Next, add celery, carrots, green pepper and onions. Cook them until they are soft.
  • Then, add seasonings, corn, minced garlic and let it all cook until the mixture is fragrant before adding butter.
  • Once the butter is melted, mix in flour until it's coating everything and let it cook a couple minutes to remove the flour taste before adding milk and chicken stock.
  • Stir frequently until it comes to a boil (if you added potatoes before this step check to see if they are fork tender).
  • Once at a boil, fold in bacon and velvetta, stirring until smooth.
  • Taste and season to your liking, serve hot!
