Blueberry Scones
With this recipe, you can elevate your breakfast game. Who doesn’t love a good scone? Pair it with a side of crispy bacon and some scrambled eggs and you’re sure to have a fantastic day!


Here’s what you’ll need to make this delicious recipe:
- 2 cups pancake mix
- 1/2 cup sugar
- 1/3 cup cubed cold butter
- 1/2 cup milk
- 1 tsp vanilla
- 1/2 cup blueberries
- Optional* sugar to sprinkle on top


Let’s get baking!

In a mixing bowl, add flour and sugar. Mix it completely.
Add cubed cold butter and smash into sugar/flour mix until you get a crumbly consistency.
Next, add milk and vanilla. Mix until the dough is formed.
Lightly fold in the blueberries or any toppings you choose.
Next, lay the mixture on a parchment lined baking sheet and press out to about a 1-1 1/2 inch thick circle.
Cut into 6ths and arrange the pieces on the baking sheet about 2 inches apart. Sprinkle the tops with sugar if you should so desire.
Bake for 13-15 minutes at 425°F.
Lastly, remove from the baking sheet and place on a cooling rack to stop the cooking process.
Let them cool for 5 minutes and enjoy!
