Breakfast Casserole

Looking for a quick, easy breakfast to make on your smoker for those out of town house guests?


Here’s what you will need to make this yummy recipe..
- 1 lb cooked and chopped bacon or 1 lb of cooked, chunked up sausage
- 1 bag frozen potatoes
- 8 oz shredded cheddar cheese
- 8-12 whole eggs
- Favorite breakfast seasoning to taste (or just salt, pepper and garlic powder)

Let’s get cooking!
Start off by lightly greasing a grill safe pan. Spread the whole bag of hash browns on the bottom of the pan evenly.
Sprinkle cheese over the hash browns and then add all the bacon or sausage over that, spreading evenly.
Next, pour the beaten eggs over everything, making sure to cover the entire pan.
Cover and then smoke at 400°F for 45 mins or bake at 400°F for 40 mins or until the eggs are completely set up. I usually just poke the center with a spatula to see if the eggs are cooked.
Serve on a plate as a casserole or add it to a shell to make it the ultimate breakfast burrito. It’s delicious!
If you don’t like bacon or sausage….use chorizo, ham or even just veggies!
