Cheesy Bacon Corn Chowder
Need a warm bowl of something yummy to get you through a cold evening? This chowder is fantastic! The blend of all the ingredients makes a beautiful melody of flavors that make your taste buds dance.




Here’s the ingredients list:
- 1 Tbsp olive oil
- 1 cup chopped celery
- 1 cup chopped carrots
- Salt and pepper too taste
- 1 Tbsp garlic powder
- 1 chopped onion
- 1 chopped green pepper
- 1/2 stick of salted butter
- 2 drained cans of whole kernel corn
- 1/4-1/2 cup flour
- 1/2lb – 1lb of bacon cooked and chopped
- 4 cups chicken stock
- 2 cups 2% milk, or your preference
- 16oz Velvetta chopped into cubes (helps melt faster)
- Optional* 4 cubed potatoes

Let’s get cooking!
In a large pot, over medium heat, add oil to your pan and let it heat up.
Next, add celery, carrots, green pepper and onions. Cook them until they are soft.
Then, add seasonings, corn, minced garlic and let it all cook until the mixture is fragrant before adding butter.
Once the butter is melted, mix in flour until it’s coating everything and let everything cook a couple minutes to remove the flour taste before adding milk and chicken stock.
Stir frequently until it comes to a boil (if you added potatoes before this step, check to see they are if fork tender)
Once at a boil, fold in bacon and velvetta, stirring until smooth.
Taste and season to your liking, serve hot!
