Chocolate Mayonnaise Cake
If you’re looking for a cake bursting with moisture and flavor, look no further than this delicious, chocolate mayonnaise cake! This recipe appeals to everyone’s sweet tooth without being super heavy or overly rich.

Most people get hung up on the thought of putting mayo in a cake, but don’t let that stop you. Essentially, mayo is just a mixture made up of eggs and oil, which is what is in cake, right? You definitely won’t be disappointed and nobody will believe that you used mayo when they’re devouring this slice of heaven.


Here is the list of things you’ll need to create this yummy confection:
For the cake you’ll need:
- 3 cups flour
- 6 Tablespoons cocoa powder
- 1 1/2 cups sugar
- 1 Tablespoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups mayo
- 1 1/2 teaspoons vanilla
- 1 1/2 cups water
For the ganache you’ll need:
- 2 cups semi sweet chocolate chips
- 1 cup heavy cream

Now, let’s get baking!
Preheat oven to 350° Fahrenheit.
Mix all dry ingredients in a bowl and set aside.
In a larger bowl, mix water, vanilla and mayo until smooth and slowly stir in dry ingredients with a whisk. To keep cake light and airy, do not over mix.
Pour batter into lightly greased 9×13 baking dish.
Bake for 40-50mins (or until toothpick comes out almost clean) and let the cake cool completely.
In a heat safe bowl, add all of the chocolate chips and set aside.
Heat up the heavy cream slowly in a small pan on the stove until it’s simmering (DO NOT MICROWAVE).
Pour the cream over the chocolate chips and let it melt to form the ganache, stirring with a metal spoon or spatula until it cooks down (this could take up to 30 mins. You can speed this process up by putting the mixture in the fridge and stirring occasionally).
Once cooled, slowly and evenly pour the ganache over the cake and let it sit for 30 mins in the fridge. Make sure to cover the cake to allow it to finish setting up.
Next, slice yourself a large piece, grab a glass of milk and relax. Don’t forget to keep the remaining cake refrigerated until you’re ready for your next slice.
