Dorito Casserole

If you like Doritos then you will absolutely LOVE this casserole! It’s filling and delicious without being heavy on your stomach. Eat it directly as a casserole or use it as a filling for a burrito. You’re welcome!

Here’s what you’ll need to make this:

  • 1 lb ground beef
  • 1/2 chopped onion
  • 1 Tbsp minced garlic
  • Taco seasoning to taste
  • 1 can Rotel
  • 16oz shredded cheese
  • 1 can drained corn
  • 1 can drained black beans 
  • 1 bag finely crushed Doritos 
  • Sour Cream
  • Chopped lettuce (amount to your liking)

Ok, let’s get cooking!

Start out by preheating the oven to 350°F.

In a pan, cook the ground beef and onion until the onion is soft.

Remove excess grease if needed..then add taco seasoning and garlic, rotel, black beans and corn; mixing until it’s all combined.

Let it cook a couple minutes before adding in a handful of your crushed Doritos (between 1-2 cups) and half of the cheese.

Remove from heat and mix until combined and the cheese is melted.

Next, in a 9×13 pan, pour the mixture out evenly.

Cover with the remaining cheese and top with the rest of your Doritos evenly.

Bake for 5-10 minutes or until the top is golden brown.

Lastly, remove the pan from the oven and let it rest 5-10 minutes before topping with lettuce and sour cream to serve.

    Absolutely delicious! I didn’t use rotes tomatoes, I used fire roasted (I don’t like spicy). It was extremely easy to make and I have leftovers
