Sheet Pan Fajita Chicken
Do you love chicken? Do you love vegetables? Then you’ll love this recipe! And on top of that, it is the perfect meal prep item. Or add it to a wrap or make it into quesadillas! (Check under “Dinners” for the quesadilla recipe!)


Here’s what you’ll need to make this recipe:
- 5 lbs chicken breast or thighs cut into strips
- 5 bell peppers cut into strips
- 1-2 onions cut into strips
- 2-3 Tbsps olive oil
- Salt, pepper, garlic powder to taste
- Your favorite fajita seasoning to taste
- 1 tsp garlic powder and 1/2 tsp each of oregano, cumin, paprika, salt, pepper, chile powder, onion powder


Let’s get cooking!
Starting out, preheat your oven to 425°F.
In a large bowl, add cut peppers and onions, seasoning them with salt, pepper and garlic with about 1 Tbsp of olive oil. Mix until everything is combined.

Get out a large sheet pan and spread the peppers and onions flat on 1/2 the tray.
Next, take a bowl and add in chicken, olive oil and seasoning. Mix everything until the chicken is covered.
Spread the chicken on the other half of the sheet pan so every piece is flat to help it all cook evenly.
Place the sheet pan in the oven and bake for 30-40 minutes or until the chicken is at least 165°F and the peppers are roasted.

Lastly, let everything cool for 5 minutes before serving (can be used to make tacos, quesadillas, over rice or just placed in a meal prep container for a easy meal later).

Amazing quick n easy mix
Tried this tonight. Was very delicious! I omitted the salt for dietary purposes but it didn’t affect the flavor at all. Paired it with some chopped jalapeños and wheat tortillas. Family loved it.

Any taco seasoning will work if you already have it.

I made this last night. It was so easy and so delicious! I never would have thought to make fajitas on a sheet pan! I kept it really simple and used the packets of fajita seasonings. We put warmed queso sauce, a little taco sauce, and sour cream on them and they were outstanding! Thank you! 👏🏻👏🏻
