Starting out, cut and cube your sweet potato to bite sized pieces and place in a bowl. Coat the pieces in olive oil and season appropriately to your taste. Mix until everything is coated evenly.
Next, place the sweet potato pieces in your air fryer or oven flat and spaced out and cook at 400°F for 12-15 minutes or until fork tender and outside is crisped as desired.
tip: flip or toss halfway to help cook evenly.
Remove and set aside for plating.
Next, in a large pan, brown and mince ground beef to bite sized pieces. Season to taste; use paper towel to remove excess grease if needed.
Remove beef from the pan and lightly brown onion pedals if desired before setting aside.
Lastly, in a large bowl, place between ⅓-½ potatoes in a decent sized bowl or plate. Then place the same portion of ground beef over the top of that. Next add onions, lettuce and sauce… toss and enjoy!
