Big Mac Bowl
Do you love a good burger, specifically a Big Mac, but want a healthier version at home? Give this a try! Replace the buns with sweet potatoes. This is a fantastic meal in a bowl as is or put it in a low carb tortilla shell to switch it up the next time. Make sure to hop on over to the Burger Sauce recipe to get the full flavor!

Here’s what you’ll need to recreate this meal:
- 1lb ground beef
- 1 head of lettuce chopped into strips
- 1 washed and diced large sweet potato
- 1/2 onion cut into strips
- Burger sauce to taste (see burger sauce recipe)
- Salt, Pepper, garlic powder to taste

Let’s get cooking!
Starting out, cut and cube your sweet potato to bite sized pieces and place in a bowl. Coat the pieces in olive oil and season appropriately to your taste. Mix until everything is coated evenly.

Next, place the sweet potato pieces in your air fryer or oven flat and spaced out and cook at 400°F for 12-15 minutes or until fork tender and outside is crisped as desired.
tip: flip or toss halfway to help cook evenly.
Remove and set aside for plating.
Next, in a large pan, brown and mince ground beef to bite sized pieces. Season to taste; use paper towel to remove excess grease if needed.

Remove beef from the pan and lightly brown onion pedals if desired before setting aside.
Lastly, in a large bowl, place between 1/3-1/2 potatoes in a decent sized bowl or plate. Then place the same portion of ground beef over the top of that. Next add onions, lettuce and sauce… toss and enjoy!
