Cheesy Taco Rice

Yield: 7

Materials

  • 1 lb ground beef
  • 1/2 diced onion
  • Favorite taco seasoning to taste
  • 1 can of rotel
  • 1 can of tomato sauce
  • 1 1/2 cup beef broth
  • 1 Tbsp olive oil
  • 1 cup rice
  • 1-2 Tbsp mixed garlic
  • 2 cups shredded Monterey Jack cheese
  • Cilantro to garnish
  • Tortilla chips or shells

Instructions

  • In medium heat pan, brown meat and toss in onion and taco seasoning. Cook until onions are caramelized.
  • Clear a spot in the center of the pan by moving everything to the perimeter of the pan. In the center, pour in oil, then add in rice and garlic. Let everything toast up until light brown.
  • Add tomato sauce, beef broth and rotel.
  • Cover and let cook until rice is done (about 10-15 mins), stirring frequently so the bottom doesn’t burn.
  • Stir in a 1/2 cup of cheese, then top with the remaining cheese evenly and place under broiler to melt up cheese (or just cover with lid).
  • Garnish with cilantro and serve with chips. Enjoy!
