Cheesy Taco Rice
This cheesy taco rice makes the perfect dip or even a filling for tortilla roll ups! The ingredients are a beautiful melody that will want to make your taste buds stand up and sing. It’s sure to be a crowd pleaser no matter which way you serve it.




Here is the list of things you’ll need to create this recipe:
- 1 lb ground beef
- 1/2 diced onion
- Favorite taco seasoning to taste
- 1 can of rotel
- 1 can of tomato sauce
- 1 1/2 cup beef broth
- 1 Tbsp olive oil
- 1 cup rice
- 1-2 Tbsp mixed garlic
- 2 cups shredded Monterey Jack cheese
- Cilantro to garnish

Now let’s get cooking!
In medium heat pan, brown meat and toss in onion and taco seasoning. Cook until onions are caramelized.
Clear a spot in the center of the pan by moving everything to the perimeter of the pan. In the center, pour in oil, then add in rice and garlic. Let everything toast up until light brown.
Add tomato sauce, beef broth and rotel.
Cover and let cook until rice is done (about 10-15 mins), stirring frequently so the bottom doesn’t burn.
Stir in a 1/2 cup of cheese, then top with the remaining cheese evenly and place under broiler to melt up cheese (or just cover with lid).
Garnish with cilantro and serve with chips. Enjoy!

Can you make this with chicken?
Yes, changing the protein should still work just fine.
Could you vary this with enchilada sauce instead of tomato and use Velveeta instead of cheddar?
