Cheesy Taco Rice

This cheesy taco rice makes the perfect dip or even a filling for tortilla roll ups! The ingredients are a beautiful melody that will want to make your taste buds stand up and sing. It’s sure to be a crowd pleaser no matter which way you serve it.

Here is the list of things you’ll need to create this recipe:

  • 1 lb ground beef
  • 1/2 diced onion
  • Favorite taco seasoning to taste
  • 1 can of rotel
  • 1 can of tomato sauce
  • 1 1/2 cup beef broth
  • 1 Tbsp olive oil
  • 1 cup rice
  • 1-2 Tbsp mixed garlic
  • 2 cups shredded Monterey Jack cheese 
  • Cilantro to garnish

Now let’s get cooking!

In medium heat pan, brown meat and toss in onion and taco seasoning. Cook until onions are caramelized

Clear a spot in the center of the pan by moving everything to the perimeter of the pan. In the center, pour in oil, then add in rice and garlic. Let everything toast up until light brown.

Add tomato sauce, beef broth and rotel.

Cover and let cook until rice is done (about 10-15 mins), stirring frequently so the bottom doesn’t burn.

Stir in a 1/2 cup of cheese, then top with the remaining cheese evenly and place under broiler to melt up cheese (or just cover with lid). 

Garnish with cilantro and serve with chips. Enjoy!

    I love your recipes. Quick and easy. I am what they like to call “senior citizen”. My grandson lives with me and he eats whatever I make. I’ve found anything I make from your recipes go over great. He’s born and raised here in Indiana and he’s pretty much “feed me anything”. lol. Thanks for being.

    Yum I’d love this! I like a lot of rights though so I might add some more rice and then put it in a taco or like you said circuit with chips and stuff. Thank you for this. Very nice love
