Author: Justin Holmes

Ingredients

  • 3 bell peppers
  • 1 yellow Onion
  • 4 chicken breasts
  • 10.5 oz can cream of chicken
  • 1 oz packet brown gravy mix
  • 2 cups of chicken stock
  • 2 tsp of onion
  • 2 tsp of garlic powder
  • 1 tsp each of paprika black pepper, seasoning salt, thyme, and Italian seasoning
  • Optional*** tsp of cayenne or creole seasoning for some spice

Instructions

  • Starting out, carefully cut an onion and peppers into strips and set aside.
  • Next, add a can of cream of chicken, seasonings, chicken stock and brown gravy mix to your crockpot and whisk until combined.
  • Place the chicken in crockpot and peppers and onions on top.
  • Cover and let everything cook until the chicken is 165°F, either on low for 6-8 hours or on high for 3-4 hours approximately.
  • Next, remove the chicken carefully and dice before returning to your crockpot (or leave the chicken in the crockpot and using a meat masher, shred).
  • If too thick of gravy, slowly add more stock until desired consistency is reached.
  • Serve hot over rice or mashed potatoes.
