Starting out, carefully cut an onion and peppers into strips and set aside.
Next, add a can of cream of chicken, seasonings, chicken stock and brown gravy mix to your crockpot and whisk until combined.
Place the chicken in crockpot and peppers and onions on top.
Cover and let everything cook until the chicken is 165°F, either on low for 6-8 hours or on high for 3-4 hours approximately.
Next, remove the chicken carefully and dice before returning to your crockpot (or leave the chicken in the crockpot and using a meat masher, shred).
If too thick of gravy, slowly add more stock until desired consistency is reached.
Serve hot over rice or mashed potatoes.
