Crockpot Smothered Chicken
You can never have too many chicken recipes, right? Well, this one is another that you need to add to your regular rotations of chicken recipes! Customize it a little differently every time you make it and it will feel like a new recipe. This meal is also a great meal prep to help your week go a little smoother.


Here’s what you’ll need to make this delicious meal:
- 3 bell peppers
- 1 yellow Onion
- 4 chicken breasts
- 10.5oz can cream of chicken
- 1oz packet brown gravy mix
- 2 cups of chicken stock
- 2 tsp of onion
- 2 tsp of garlic powder
- 1 tsp each of paprika, black pepper, seasoning salt, thyme, and Italian seasoning
- Optional*** tsp of cayenne or creole seasoning for some spice


Now, let’s get this party started and get to cookin’!
Starting out, carefully cut onion and peppers into strips and set aside.
Next, add a can of cream of chicken, seasonings, chicken stock and brown gravy mix to your crockpot and whisk until combined.
Place chicken in crockpot and peppers and onions on top.
Cover and let everything cook until the chicken is 165°F, either on low for 6-8 hours or on high for 3-4 hours approximately.
Next, remove the chicken carefully and dice before returning to your crockpot (or leave the chicken in the crockpot and using a meat masher, shred).
If too thick of gravy, slowly add more stock until desired consistency is reached.
Serve hot over rice or mashed potatoes.

Thinning it out with the stock when everything is done might make it similar with the Chicken a’ la King I make loaded with extras. Roasted red peppers from a jar just for color near the end and/or fresh mushrooms and served over toast points, kids might not go for those additions! There might be some inexperienced young hands that would be old enough to handle tongs and a toaster hanging out waiting for dinner to be served! I do understand the object is to make it simple by using a slow cooker and just forget any extra work.
I would love to see more easy recipes dinners. I’m a kinda person that I love to freeze food for myself later in the year. It helps me out. Do to I’am on a fixed income. And if I get down and don’t feel like cooking, I can just warm up and eat. Thank you Jennylee
