Enchilada Burritos

The stuff of legends. The mouth watering meal that will have you rolling up to the table for seconds and thirds. The ultimate meal prep dish. Introducing: Enchilada Burritos… also known as Aunt Kim’s Burritos! You most definitely will want to try this recipe out! It is one of our top favorites.

Here’s the list of things you’ll need to make this recipe:

  • 1lb ground beef
  • 1/2 chopped onion
  • Taco seasoning to taste
  • 1 can of Rotel
  • 5 tortillas 
  • Colby Jack cheese (measure with your heart)
  • 1 can cream of mushroom

Now, let’s get baking!

Start out by preheating your oven to 400°F.

Next, in a pan on medium heat, brown the ground beef, onion and taco seasoning. 

Use a paper towel to blot up excess grease.

Mix in one can of rotel; stir often until it’s thickened and then turn off the heat.

Add the mixture to tortillas and top with cheese to your liking.

Next, roll into burritos and place in a lightly greased 9×13 baking pan. 

In a seperate bowl, mix cream of mushroom and 1/3 of that can full of water. This helps get any of the remaining cream of mushroom residue off the sides of the can. If you pay for it, you may as well use it all!

Pour the cream of mushroom and water mixture over the burritos, top with additional cheese to liking. Obviously, cheese makes everything taste even better! 

Bake for 30-35 minutes, then broil for 2-3 minutes or until the burritos are golden brown to your preference.

We enjoy serving our burritos with a side of tortilla chips and salsa and some refried bean dip.

I wonder if you can substitute cream of mushroom soup with another instead? I’m so thankful to have stumbled on your short videos on Facebook and YouTube!     1. Although I have never subbed the cream of mushroom soup for this recipe, I’m sure you can use another “cream of __”. Try it out and let me know how it turns out. Maybe I can add it as an alternative to the recipe if it turns out super yummy!
