Sausage and Shrimp Jambalaya

Ingredients

  • 1 lb kielbasa or sausage cut
  • 1 lb raw deveined, shrimp (chopped) or chicken (shredded)
  • 1 Tbsp Bacon up or your preference of oil
  • 2 green peppers chopped
  • 1 onion chopped
  • 1 small can diced tomatoes drained
  • 3 cups chicken broth
  • 1 ½ cups uncooked rice
  • 1-2 Tbsps hot sauce
  • Season to taste with oregano paprika, cayenne pepper, salt and garlic powder
  • Green onion chopped to garnish

Instructions

  • Starting out, add your oil to a medium heat pan. Once the pan is coated, add in sausage.
  • Next, add in green pepper and onion, cooking until soft, stirring occasionally.
  • Add and stir in all seasonings.
  • Once the green peppers are soft and onions are translucent, push the food to the perimeter of the pan to create a hole/space in the middle of the pan.
  • Add the rice into the center of the pan, stirring until toasted to a beautiful golden brown.
  • Add drained can of diced tomatoes and hot sauce. Mix and pour in chicken broth. If you forgot to drain the can, use half a cup less chicken broth.
  • Cover and let simmer 15 to 25 minutes or until the rice is done, stirring occasionally.
  • Add in chopped shrimp. Cover and let sit 5 minutes. Shrimp will be done when the color is changed to opaque and firm.
  • Garnish with green onion and serve.
