Taco Pie

Ingredients

  • 2 packages of cornbread mix
  • cup milk
  • ½ cup oil
  • 2 eggs
  • 1 lb ground beef
  • ½ chopped onion
  • 1 chopped green pepper
  • Taco seasoning to taste
  • Salt and pepper to taste
  • 1 can drained corn
  • 1 can of rotel or petite diced tomatoes
  • 1 can tomato sauce
  • 1 10 oz can red enchilada sauce

Instructions

  • First off, preheat your oven to 400°F.
  • Next, in a medium pan, brown the ground beef with onion, green pepper and all seasonings. Cook until the onion is translucent and peppers are soft.
  • Add corn, tomato sauce, enchilada sauce and rotel to the pan and stir occasionally while bringing to a light boil to let it thicken.
  • If you want to shorten this process you can use cornstarch in a little water.
  • In a separate bowl, prepare cornbread mix to package directions.
  • Optional: For easier pouring, add a little more milk to make a thinner mix.
  • In a 9x13 baking dish, pour in thickened sauce mixture, then pour the cornbread batter over the top as evenly as possible.
  • Bake at 400°F until cornbread is done and golden brown 20-25 minutes.
  • Let it cool 10 minutes before serving.
