Taco Pie
If you’re looking to shake things up a little bit with a new recipe but have more unadventurous eaters, try this recipe! It’s filling by itself or you can serve it with a side of chips and salsa and refried beans.


Here’s what you’ll need to make this recipe:
- 2 packages of cornbread mix
- 2/3 cup milk
- 1/2 cup oil
- 2 eggs
- 1 lb ground beef
- 1/2 chopped onion
- 1 chopped green pepper
- Taco seasoning to taste
- Salt and pepper to taste
- 1 can drained corn
- 1 can of rotel or petite diced tomatoes
- 1 can tomato sauce
- 1 10oz can red enchilada sauce

Let’s get cooking!
First off, preheat your oven to 400°F.
Next, in a medium pan, brown the ground beef with onion, green pepper and all seasonings. Cook until the onion is translucent and peppers are soft.

Add corn, tomato sauce, enchilada sauce and rotel to the pan and stir occasionally while bringing to a light boil to let it thicken (if you want to shorten this process you can use cornstarch in a little water).



In a separate bowl, prepare cornbread mix to package directions (optional for easier pouring add a little more milk to make a thinner mix).



In a 9×13 baking dish, pour in thickened sauce mixture, then pour the cornbread batter over the top as evenly as possible.
Bake at 400°F until cornbread is done and golden brown 20-25 minutes.


Let it cool 10 minutes before serving.
