Crockpot Cheesy Potatoes
If you love potatoes, then try this cheesy potato recipe. You’ll soon find that it will turn into a crowd favorite. And the plus side? Its super easy and cooks on its on in your crockpot.

Here’s the list of things you’ll need to make this delicious side dish:
- 30oz bag frozen potatoes (hashed OR cubed)
- 16oz cheese of choice (shredded OR cubed)
- 1/2 onion diced (I put a whole onion in on the video but recommend just 1/2 an onion)
- 8oz Deans French onion dip OR sour cream
- 1 can cream of chicken soup
- BBQ seasoning to taste

Let’s get cooking!

I used the shredded hash browns but you can also use frozen cubed potatoes as well.

Use cream of chicken or cream of cheddar. My preference is cream of chicken.

Add the potatoes and cream of chicken into your crock pot.

I used sour cream but you can use French onion dip if you would prefer.

Add it to the mixture in your crock pot.

Blocked Colby jack cheese is my favorite for this recipe. You can shred it or cube it. Or do what I did and just crumble it up in large chunks into the crock pot.

Next, you’re going to add some bbq seasoning if you prefer. I like this Big Jake’s Sweet Honey BBQ Rub. Then I add some razzle dazzle of ranch seasoning.

Top it all off with some diced onions and now it’s ready to cook!

Cook on high for 2.5-3 hours, stirring every 20-30 minutes.

I served mine with BBQ chicken thighs and green beans. Chef’s kiss! Enjoy!

These are the bomb! A lot like the hash brown casserole at Cracker Barrel. Family doesn’t like chunks of onion so I diced it fine and microwaved it about a minute with a little water, then drained it and it seemed to take the “bite” away!
Hi!
First, I really enjoy your content….real stuff for real families!!
Ok…have you ever tried using fresh potatoes in this dish? Also, do you think it would work if I subbed out another can of cream of something soup for the sour cream because I’m out of sour cream….
Thanks again for all the great recipes! ✌️
I love watching your videos. You guys are awesome. I saw your video yesterday and said I need to make that. I copied what you did and added a green pepper. It turned out delicious. I am adding this to my meal plan.
We used the French onion dip and 1/2 onion chopped. I went light on the kinder butter spice add-in. Overall, ours appeared a bit more runny and likely a bit more bland compared to yours. Definitely will try again with a few more tweaks.
I’m gonna get the stuff and make this tomorrow. ‘Cause it’s after midnight now.
Hey Amanda, I made up this word to refer to my best friend and the ladies in my Sunday School class…..
“Frister”
It’s Friend + Sister-In-Christ = Frister.
Went to see Chonda Pierce in Tupelo, Mississippi with two of my ‘Fristers’. One of them said ‘Frister’ to the lady sitting next to her as she introduced me to her. The lady asked, “What is a Frister?” She was told about how/why I added the two words together. Then she asked if she could use it too and I said, “Yes, please do.”
It was like a line of Dominoes falling how so many ladies shared the word and it’s meaning to each other. When I heard it being repeated in the restroom during intermission it made me smile outwardly and in my heart as well.
Let me know if you use it in your circle of acquaintances. If you want, we can be Fristers too. 😊
BTW….. I have Hashimoto’s Autoimmune Thyroiditis. You’ve been in my thoughts and prayers.
We LOVE watching your You Tube channel. Such a great guy you are! I’ve made several of your recipes and this is one of them. Awesome! Thank you so much!!!
I halved this recipe because it’s just my husband and I at home now. I baked it in a 350 oven for about 45 minutes and it was delicious! I am retired (I have time) so I used grated potatoes instead of frozen hashbrowns. Thank you for this inspiration, Justin.
I made this last night. I added ground breakfast sausage and eggs to it this morning. I enjoy watching your videos. This is the first recipe that I’ve tried. Looking forward to trying more in the future.
I absolutely loved this recipe! I used fresh diced potatoes instead of frozen shredded. I just had to cook it a little longer. Absolutely delicious. Thank you! Very similar to Funeral Potatoes but so easy to do in the crockpot!
Great recipe. I add ham cubes to the crockpot and call it dinner. The whole family loves this and its now in rotation in my kitchen.
