Let’s get cooking!

To start out, preheat oven to 400°F.

Cut up the onion and cook until soft, then add garlic and tomato paste and cook for 1 minute.

Add in cooked ground beef (I made mine in a Pampered Chef meat cooker and drained it of excess fat).

ingredients mixed together

Add can of diced tomatoes. I used the one with oregano and basil added for more flavor.

Add rice.

Stir in jalapeños and additional seasonings desired and let it all cook while you prep your green peppers. Cut off the tops and core out all of them.

Stuff all your peppers with mixture and place in a baking dish where peppers stand up. Mine was a 7×7 and it worked perfectly.

Cover with foil and bake at 400°F for 40 mins or until peppers are soft.

Top with cilantro and enjoy!
