Banana Bread
This classic bread is a good snack to have in the morning warmed up with some butter and brown sugar crumbled over it while you sip on your coffee or in the evening after your dinner for a nice dessert. Banana bread packaged up really nicely also makes for a sweet gift for a neighbor or friend with some flowers as a “welcome to the neighborhood” present. Make sure to add it to your recipe box!

Here’s a link to the low iodine banana bread in case you want to give that a try too!

Here’s what you’ll need to make this:
- 4-5 medium overripe bananas
- 2 eggs
- 1 stick melted butter
- 3/4 cup brown sugar
- 2 cups flour
- 1 tsp baking soda
- 1/4 tsp salt

Let’s get baking!
Preheat your oven to 350°F.
In a large bowl, mash peeled bananas to a smooth consistency with a fork or whisk.
Next, add in and beat eggs until smooth.
Combine brown sugar and melted butter and mix.
Add remaining dry ingredients and mix until the batter is consistent.
Lightly grease a loaf pan and pour into the batter.
Optional* lightly sprinkle the top with brown sugar to give it a crumb cake texture.
Bake at 350°F for 45 minutes to an hour. Toothpick check the loaf, if it comes out clean it’s done.
Let cool and enjoy!

Will keep in the fridge for up to 4 days if it makes it that long!
